Lar covered it.
As stated pastel is a line bred/polymorphic trait and jungle is a morph. Jungles, in my limited knowledge, tend to have strong color differences in the laterals compared to the back, tend to have a 'peppered' line at the top of the lats, tend to have aberrent patterns, tend to have an open circle pattern in the arrow on the head, etc. They are variable and of course, can eventually produce super jungles which are even more impressive.
Here is my 'pastel' type boa, not from a known pastel line (I have no history, she was a rescue), reduced black in the saddles and no black on the side medallions, she has lots of color as a bonus

And here is a red group jungle boa:

You can see how they are somewhat similar but different.
