I use the egg flats from 5-dozen egg pack for my roaches. I don't use any that have stains or egg yolk on them. Those go into the trash...and I always have more than enough. As far as it is safe or not, I don't know. If you feel you rather be on the safest side possible, you can always buy new egg flats.
