I'd say you have a male Cinnamon het axanthic as the father and you just proved mom to be het. With all the possible hets out there, I'd say there are a lot more hidden recessive genes floating around that people just don't know about. I have a friend that sells his 25% or less possible het pieds for the same price as normals and sells them as normals. If one of those are actually het and someone buys it and breeds it, they could be passing around the gene. I personally think this happens far more than people think.
