What 2 do with big, old, anorexic girls?

Reading another thread got me thinking about a HUGE female I have. She's easily 5 feet and weighs around 3,000 grams, but to look at her she's definitely on the slender side. She eats when she wants, which isn't very often. And unfortunately when she does, it's only medium rats. She won't touch XLs that are actually the size she should be eating. I attribute this to her just being a completely full-grown adult that doesn't necessarily "need" to eat very often. Makes it a pain to breed her though. I've had her for 2 years, didn't get anything out of her last year, and it looks like she's gonna be in the same condition this year...thanks a lot for any suggestions, ideas, or related anecdotes.
