Sexual maturity for a female Burmese Python typically occurs around 9ft in length. With your 8-footer being 3yrs old she's likely ready.
The egg-producing process takes its toll on their body so you might ought to beef her up a tad (not make her fat) before breeding & make sure she gets plenty to eat during the process.
As for her only being 8ft at 3yrs old - I rescued one a few years ago that was 7yrs old and 8ft long. She was in a bird cage, right beside the front door, when I went to get her on a cool Fall day.
Not to be offensive by any means, but please plan ahead, if you haven't already, and realize that breeders have a lot of responsibility for the hatchlings they produce in the way of ensuring that they go to qualified buyers. With normal burms, and a lot of morphs these days, that's easier said than done. Been there, done that. I'm there now.
