It sounds like you have a few options; you can feed multiple prey items until your boa is large enough to eat a juvenile rat, you can stay on your present course until she's big enough, or you can attempt a juvenile rat now.
You mentioned that the rats are a little bigger than her largest point around, that might be too big, so it might be worth switching her to two rat crawlers a week until she's large enough.
The last and easiest choice is stay on your present path, it sounds like that's enough food to keep her growing. I don't know how easy it is to switch boa's to rats once they've been on mice for a while, but I'm under the impression it's not too hard.
