Ph will be based on the input water, you'll need to use either additive to bring the Ph down or add media to the chemical portion of the canister to help maintain the proper levels. Keep in mind there is no easy way, Ph takes constant monitoring until you figure the recipe out.
Nitrates however are the end process of active bacteria breaking down, ammonia into nitrite, and again into nitrate. The only way to remove nitrate is through water changes.
I don't know what the size water element for your caymen is but I can image the bio load placed on the water element is immense.
I would do complete water changes, or at a minimum 50% weekly. ----- Jeremy Payne
