I cut on day 52 ALWAYS. i cook at 89 degrees as well.

I once had a clutch of 28 Jamp eggs, and 14 didnt pip and they died in the egg. I cant say for sure that they would have lived if i had cut, BUT they were fully developed when i finally got up the never to cut them. So i will ALWAYS cut 3 days prior to the "hatch" date.
