Photography can be really tricky. Some factors to consider are Lighting, Flash/No Flash, ISO Rating, Exposure Time, and the angle you take the picture from in relation to the light source. It sometimes helps to supplement natural lighting to get a more consistent light level. Also, if you can figure out what ISO and exposure times get you the most natural looking colors, you can manually plug that into your camera. I feel your pain... It probably takes ten mediocre pictures for every one that comes out just right.
