Just like he stated, they usually mellow out with age. What I would suggest is to build a trust with the monitor while small, with tong feeding and positive interactions. It seems like your having good progress, so keep it up. Just remember that it doesn't happen overnight, time is needed. They're solitary by nature, and prey as juvies. Being prey, they are naturally untrusting, and being solitary, they don't seek out interaction with other animals or you like a dog would.
