In my experience with timors they are very shy, like most arboreal species seem to be. As far as being handled I dont think its safe to say any species is handleable. It all depends on the animal. From what I have seen they tame down easier than most arboreal monitors. I think an ackie is more likely to tame down, but you should always be ready to get a monitor that isnt tame.
I have an ackie that is not shy, but hates being held. He will even bite sometimes. I have not worked much with him though as I do not care for him to be tame. I only hold him when I need to take him out of his enclosure for one reason or another. I have timors also that are really wild. I hate having even having to take them out, they are so high strung I feel it really stresses them out.
I have limited experience with both species having only worked with a few of each over the past few years, so I cant say much from experience. But from what I have read over the years, ackies seem to be a better choice for a beginner monitor. Everything I have personally experienced seems to confirm that. If you just happen to like arboreal monitors better though I dont think a timor would be a bad choice.
