The extreme red albinos are simply a standard t negative albino that was outcrossed to nice red colored wild type animals making the pale, muted colors of the original albino line more colorful and vibrant. The red trait can be looked at as a type of line trait that gets better and better with each generation of selective breeding. The punnett square won't help much with that type of trait, as it's not set in stone like a recessive or dominant trait would be. The extreme reds are just a single recessive mutation that were selectively bred for better color.
