I doubt VERY much the V. niloticus will grow up and eat the keeper alive. You do much to perpetuate the myths surrounding these animals!! I`ll guess you wouldn`t know what a "tame" monitor is anyway (though I prefer the word tractable), as in an animal that learns the keeper is not a threat, and is therefore less stresssed. In many cases varanids CAN become tractable, but no guarantees, and it takes much time and patience.

Just my personal opinion based on my own experiences, no offence...
