If you are talking about buying hatchlings, then ladies first -- always. Females take three years to make breeding weight, compared to one year for males. So if you are debating between a m/piebald and a f/het pied as your first purchase, I would say neither. Instead, buy a f/pied now, and then in two years when you need to start getting a male ready for her, the price on male pieds will probably have dropped to where you can buy a male pied rather than a het. That enables you to take luck out of the breeding equation.
