There is no problem in using a dimmer or drive to run any type of motor with a cooling fan.



Same goes with a "fan", the fan cool itself it's own motor.



Just have to be careful on how much you turn it down.



You shouldn't turn it lower than 25hz, no problem in running it higher than that (unless specified).



I would also recommand using a fan with the less watts but with enough CFM. (Still, remember you don't want to have a wind tunnel in your incubator, the fan is only there to circulate a little air to regulate the temperature).
