Get a sandwich baggie or some sarran wrap. Place it, so that where you puncture the egg, the albumen is directed into the bag. Then cut away the egg. Best thing I can come up with.
I know lots of people will leave bad eggs in, but I always worry about rotten egg gasses affecting such a small system like an incubator. I think it would be entirely different in the wild, in a burrow, with more air exchange; than our sealed up containers trying to keep in the humidity.
