From what you've described, I would say that a mouth infection is possible but not likely if you aren't noticing other symptoms.
It sounds to me like she is striking out of fear or defense; not hunger. She is not comfortable and feels threatened so she is trying to get the food item to leave her alone.
Best bet would be to look at her housing and try to make her feel more at ease. Maybe offer more hide areas, a smaller hide, darkness, more heat, etc. Just take a look at what you could do to remove some stress. Once she settles in and feels comfortable she'll eat. In the mean time try offering her a small prekilled food item and just leave it where she will find it at night.
