The way to tell if your turtle is gaining weight is to weigh it on a scale & periodically record the measurements. Also, I would suggest to not feed hamburger as it tends to be too fatty & also limit pinky mice for the same reason. I've put a link to some good information on general turtle care including diet with book references & if you do a search, you can then find more specific information on Wood Turtles.
