If this is a sub-adult dragon & is nearly full-grown, you can coax them to accept vegetation by topping or interlacing the salads with mealworms/zophobas. Make sure that the salads are in a dish in which the larva cannot escape too easily & the dragon has easy access. Generally, the dragons will "accidentally" ingest vegetation, if it is chopped well enough. They gradually get used to eating it without insect "toppings".
