When I need older rats I just wean them as usual but, instead of freezering them I put them in a tub to grow them up a bit. It doesn't take that long to get them to good medium size and I think is more efficient than taking them to larges in months. I wouldn't reset a breeding group each time or you are wasting experienced breeders that will do a better job. I do retire my breeders to the freezer, but only when it is time and I already have a group reproducing to replace them. Otherwise you get all sorts of lag time that is not worth waiting out.
