I looked all over for a plastic wing nut for my application but could not find anything I liked. However, be sure to check US Plastics, Outwater Plastics, etc., maybe you can find something new.



The thumb tabs in this picture were found at a Woodcraft or Rockler store in Indinapolis - can't remember which. Check both of their websites and I'm sure you can find something.



They are not quite what you are looking for but I think you'll like them. They are extremely secure.
