I think your right about both of those things. It could be stress and it could be light intensity. Have you added something new to his cage? Because this might be stressing him out. I think it is the light intensity though, because this also happened to my chameleon before. He look gray, because it was too cold and there was not enough light shining on him. So, I would try a larger watt bulb on him and see if that works.
