I think it means the size of the cricket's body, but I always go a little smaller just to be safe. For the babies you definately want the crickets to be small, because the smaller they are the softer they are.
As for the appetites, it's very normal for beardies to lose interest in food after a big journey like that. They should eat a little more each day as they settle in.
