I use the sphagnum moss hide too, but it's still difficult here in Southern California to get humidity consistently high. What I've had good luck with is this:
I got one of those "Critter Keeper" things - the one that's wide and long, not tall. I put an inch or so of barely-warm water in it, and put the snake in for a bath. An hour later, I go back, take him out and put him back in his cage. I do this every day with each snake from the time he goes blue, and I'm now getting consistent one-piece sheds.
What I've been told (and what works for me) is that the water needs to be shallow enough that the snake can coil up and rest its head, otherwise it will get tired and drown. I'm very happy with the sheds, and the snakes seem to appreciate it, too.
