I'm not sure I understand your water question. We use big cement mixing tubs (black plastic, a few bucks at lowe's) for water dishes, and change them weekly.
As far as nesting, if you don't see her doing it, you will likely not find the eggs. They can hatch on their own naturally, though. To see her doing it, check on her every hour or so every evening through spring and summer, or as often as you can, and hopefully you will get lucky.
I know my groups well, so I can generally tell when I need to start paying attention. Eventually you should get a good handle on your animals schedules in a few years.
