If this was my first cham I'd say the adult. Babies are easier to deyhydrate, overheat, feed incorrectly (and they need lots of tiny food that may be hard to get on short notice), and physically injure. An adult may be more set in it's ways, but the personality will be more obvious, you can "see" what you get, and there may be some good history on it's care you can use. Besides, you will only need to deal with one cage...the adult size.
