how often do they shed?

I've had my adult crested for about 3-4 months now, and just wondered how often I might expect him to be shedding? Since I hardly ever see him and he gets very stressed by just about everything, I don't want to handle him a lot but I also don't want him retaining skin on his toes or something like that and losing them before I realize he has even shed. I thought I saw something that said they will eat the old skin?
