sex of timors

I just got three timors today and I'm really excited. The store told me two are female and one is male, and they labeled them, but I just want to double check. How can you tell the difference? Also, I keep hearing different things about the nutritional value of mice, and I'm just wondering if they're a good food item. Any advice you can give me on a variety of things to feed them would be great.
