There is actually some good stuff out there,maybe you should start there and get back to me with further questions.
Daniel Bennets book is good,as is "Varanoid Lizards of the World"
By Pianka/King, The taxon Management report on Dumerilli by Mike Fost is exellent,as is "monitors, the biology of varanid lizards" by King/Green, Also Mark Bayless and I wrote an article for reptiles mag march'04.
As far as "training",I will say that they are very intellegent,and pick up on our behaviors quickly.
I do feed mine a staple of crayfish,4-5 times a week or more,I also feed whole shrimp/crab,mice,roaches and even mealworms occasionaly.I feed my dums every day.
