Raised shell plates

I have a baby snapper that is finally coming out of a shedding phase and I see her individual back plates are raised compared to the rest of the shell. She's had mealworms lately with the regular pellets. Is this because of all the protein? Should I stick with just the pellets for awhile? She's only about 2 inches long, shell-wise.
