People have already indicated below that either of the thermostats you are particularly interested in would be good choices. Now, to figure how many thermostats to get, you first need to determine how many heat panels you wish to regulate. Then add up the rated wattage of the heat panels and compare with the maximum load allowed for the thermostat.

So, if one thermostat is rated at 500 watts, you could run up to say 5 heat panels of 100 watts each, or 10 heat panels of 50 watts each (theoretically, of course).

I’m just guessing, but the Pro Products heat panels in that photo you posted look like they’re around 50 watts, and if there are six of them there, that Helix thermostat pictured could certainly handle all of them. One thing to keep in mind is that there will always be some temperature differential between the top and bottom cages in a stack like that so you have to decide if you want to use more than one thermostat so the bottom ones aren’t always a little cooler than the top ones. Or you could use slightly larger heat panels in the bottom cages. Also, the heat from the back of the lower panels will rise through the floor of the cages above
