"Maybe I'm just paranoid... "
^exactly ^
first, i would quit with the babyfood all together.
second, i would mix the food as it suggests to be mixed on the label 2:1 water to diet.
third, i would leave your gecko alone except for watering and feeding for the next couple of weeks, and maybe a 5 minute session for handling each day.
fourth, the only thing i would do is monitor his appearance ( being filled out) and weather or not it is pooping regularly.

if it does not look emaciated, and is pooping, i would leave it alone until you can tell your gecko is eating it's food.
if you offer food every night is is more than likely going to turn it down 2-3 nights a week because it most likely ate as much as it could the day before.

just remember, some people keep thousands of cresteds, and have 1% of them die while in their care while being kept on this diet, and this diet alone, so chances are your gecko is perfectly fine and just needs to be broken into it's environment.
this is the way i, and many others keep cresteds, but it is not the only way so don't take offense to what i've said.
good luck
