ok, so it's been 3 weeks since she last ate. She's a full week from her last shed, and yet she refuses to eat her rat! This is so unlike her, what should I do? Could there be something she doesn't like about the particular rat or is that highly unlikely?

Live rat or dead?. If frozen did you warm it up enough. How long have you had this snake? It could well be that something may not be right about the rat so try a different rat.
