Will this definitely produce snows or will I just get double hets and have to line breed? How does this work? Thank you!

Both Albino and Anery are recessive traits. Meaning they have to get the gene from each parent for the trait to show. To get a Snow it has to get both a Albino AND a Anery gene from both parents.

IMO the best pairing for a variety of known het offspring and getting Snows would be a Albino het Anery crossed with a Anery het Albino.
