Is it a crab shoot what color they turn out, I have seen green and yellow, green and blue and green and white.

Do you mist them in the morning or at night?

I mist his cage when it needs it I just look on the digital gauge in the tank and if it goes below 65% i mist it. I havent had any problems yet with him sheading and I have had him for 10 months now. Heres a pic of the cage I have him in hes in the top one. It is 36"w x 24"h x 12"d Im going to be making him a new tank soon that is 36"wx24"hx24"d.

What they will look like after the color change is like playing the lottery; however, knowing what the parent's looked like can give some indication. As far as misting, I mist in the mornings only, which raises the humidity during the day but allows the humidity to drop over night. Maintaining high humidity 24/7 is not natural or healthy. In my opinion, if you need to mist more than once or twice a day to keep the humidity levels up, then their is something wrong with your setup. A good setup will maintain good humidity by just using a large water dish.

If you know the locality it's another way of knowing what it'll turn out...

Biak's tend to hold yellow with some white speckling on some, Aru's, marukes tend to get white down the spine, mainland types like sorongs tend to get blue dorsal "stripes". Unless the parents were WC animals you can't really go by what locality you're told, but it does help.
