In order to help give my frog a varied diet, would it be okay to feed her wild caught prey items? I'd be thinking something along the lines of worms, minnows, mice, and crickets. Would there be any problem with potential disease?

I think everyone will tell you the same thing. Wild caught food is very unsafe because of the potential for parasites. The only way I can think of to limit the number of parasites is to quarantine it for at least a few weeks then afterwards freeze it. I had a fish a long time ago that I fed a worm I found in my garden. He got real sick afterwards and eventually died a month afterwards. So if you were to try feeding wild caught food (which I don't suggest) you could try the things I mentioned above and hopefully you won't have any diseases.
