I defenetly would advice you to build your own barn. The kits are nice but you want more out of building than they offer. It would almost be cheaper to design your own and build it than to modify a prefab kit.
Some points of inerest;
-Isulation to manage temps.
-A possible HVAC/humidifier to maintain those temps.
-2x4 construction for strength as well as structure to house insulation, nail siding, and interior panels.
-Taller than typical shed roofs, most prefab kits have ceiling height that is not user friendly. You will spend a great deal of time in there you don't want to duck.
-Plumbing and Electrical, got to run equipment as well as provide drinking/cleaning water.
-A real exterior door, premade with insulation as well as a snug fit to keep out weather and keep in escapes.
-If built correctly will add to the resale value of your home.
