My questions before I begin would be...
1.) How much of this "Fresh Water" fish to you give him?
2.) Do you provide any other animals or vitamin supplements?
The reason being is that if you are only feeding the caiman exclusively fish, then this could lead to some malnourishments in other aspects. My recommendation would be try add in some mice and such as well. Try to get some whole food items, some chunk meat such as beef, chicken, etc into his diet (but make sure that you provide a vitamin supplement as well). You can also try a commercial diet that is complete called Mazuri Crocodilian Diet. You can find the diet here:

I am not saying that feeding fish is a bad thing because it cerainly is not, but it just simply should not be the staple diet for the animal.
