Is it common for breeding adult males to go off food? I only have one that will eat.

Most of my males won't touch food during March and April. I would still try feeding whenever you feed the females though to be safe. You don't want a male feeling to hungry when you put him in with the girls.
I always wait a couple of days after feeding also before I intro pairs. I've had both males and females regurgitate when I intro'd to soon. I think to much activity gets them upset.
