That's a good looking snake. Is that considered to be a white oak? I know you said normal but isn't the white oak just a normal color variation? How big is he at a year. I don't know the age of mine but I'm guessing just under 2 being that he's gotta be about 3'. The head pattern on yours is quite a bit different, a more organized pattern. Now I'd be really curious to see some adult grey rat pics. Oh, answering your question, I really don't know. Got it at a show. The guy said it was captive bred but I beleive he would have told me anything I wanted to hear. I will note there are no scars of any sort. Basically perfect condition. Slender yet well muscled. I may have to look into getting a female.
To answer your question about him being a "White Oak" Gray Rat Snake, I think that most of the people on this forum would say no. If you look, you will notice that his background color is a little darker than yours and he has saddles that are darker and cover more area.
Length is often not a good indicator of age. A reptiles size when they are young has a lot to do with how well they are fed or over fed. I would guess that your three foot obsoleta is about three years in age.
The picture of my Gray is at two years of age. He is a year older and still shows the same pattern on his head.
