if a salmon was bred to an albino, what would the offspring be? and what would the offspring of the offspring be?

Like gmherps posted, check out boagenetics.com but ....

You said a salmon (hypo) bred to an albino so I am assuming you mean a heterozygous hypo since you did not say a super or homozygous.
Half the offspring would be heterozygous albino and the other half would be hypo heterozygous albino.

Depending on which offspring you bred together you would get the following ...
Super sunglow (homozygous hypo albino)
Sunglow
Albino
Hypo heterozygous albino
Super hypo heterozygous albino
heterozygous albino
normals

If you breed a hypo to an albino the litter will consist of:

50% hypos het albino
50% normals het albino

If you were to breed a pair of the hypos het albino together you could expect:

18.75% Normal Possible Het Albino
6.25% Albinos
18.75% Possible Super Sunglows
56.25% Possible Super Hypos Possible Het Albino

I like seeing people post the actual percentages. It helps show the probable outcomes better than just listing the possible outcomes. This is a prime example of you could get some really cool babies but the majority would be various unknown hets/supers. Only thing I'd add would be the probability on the "possibles" like:

If you were to breed a pair of the hypos het albino together you could expect:

18.75% Normal, 67% Possible Het Albino
6.25% Albinos
18.75% Sunglows 33% Possible Super
56.25% Hypos 33% Possible Super, 67% Possible Het Albino
