HANDLING, BEGINNER

I have had my leopard gecko for 12 days and am wondering how long it'll be until it can trust me to hold it. I have tried a couple of times but she just hissed at me and went away. I havent been trying to pick her up, i have been reaching my hand to let her walk on it, but she hasnt done anything. Also, the first couple days i had her she ate well and was attacking the crickets like crazy, but then she didn't eat well or at all for 3 days, and now shes back to normal and eating great. Any explanations? I havent seen her drinking very much,but shes been eating

The are nocturnal so the do most things at night. Just keep fresh water in a bowel for them and they will drink as needed. Also make sure you have a humid hide. It is vital for their health.
As for the eating behaviors they sound normal. If they gourge themselves they may not be hungry for several days. As time passes you will get a feel for how their feeding schedule is.
For handling it takes time and a little knowledge. When I clean their cages make them walk over my hand. I give them a smalll nudge to herd them. After a while they get comfortable with you. It gets to the point where some I have to pick up to move because touching them doesn't move them.
