I just wanted to update all those who were kind enough to reply to my post.

After continuing to force-feed both of my Uros while still offering them food I finally found something they will eat and they are both gaining a lot of weight, dry lentils! I have also found that if I put carrot shavings in their terrarium they will eat them once they have dried out and dehydrated.
I guess it makes sense that they only eat food in this state since they are from the desert and all.

I am continuing to give them each 1cc of veggie baby food each week and I soak them every 2 weeks so that they get their moisture. They both seem to take well to the soaking, they both submerge themselves completely for a few seconds at a time, seems weird to me but I have been told it's normal....

That is great news.
It sounds like you have turned a corner. Be patient. Being that you are soaking the uros they are probably getting the moisture they need during their soak. Can you see them drinking?
Do not push them too hard and cause any undue stress. Once they get used to feeding and are thriving, you can introduce more food items that tey will start to accept.

Ok, so before I even read this I gave them some snap peas this morning and they have both been eating them up, as long as they continue I won't have to worry about moisture anymore either.
