I often hatch out house flies and was wondering if it is possible to gutload them? If so, what is a common food item that they are attracted to and eat that would also be good for my chams?

Yes, it is possible to gutload them. They need a water source and an attractive food staple. I use fresh orange wedges for their water supply, and gutload with a mix of Sticky Tongue Farms Vit-All (not Minerall), powdered calcium, cricket or roach dry gutload, and dry rice baby cereal, in organic molasses. Mix to a thick paste. The flies love it, and it's good for the chams.
