Diet doesn't need to change, though s/he may show a bit of a lack of apetite for a day or two. I generally try to leave mine be as far as handling at least until she's done shedding, though it is a good idea to inspect them after they get done. Check around the toes and eyes especially for any unshed skin - if left alone, it can constrict around the toes and cause them to lose their toes. Usually they do a pretty good job, but sometimes you might have to bother them with a moist q-tip if they leave some around a toe.
BTW, you've got the wrong 'here' - 'here' is a location, 'hear' is what you do with your ears...
