sex can be determined three ways,

Yes they can. That would produce a hybrid and....
that particular mix Cal king/corn snake is called a jungle corn.
In my opinion the corn should be dropped from the name.
It should simply be called Jungle.

Corn snakes are not difficult to feed.
Yes there are occasions when hatchling corns may be hesitant to feed but the percentages are much higher in favor of the feeders.
Kings, I guess on the average, can be more "nervous" I don't like to use aggressive, they don't come looking for trouble they just tend to be a bit more defensive.
But, many many people have kings as docile as corns.
I have a wild caught king at this time that will rattle its tail a little when I open it's container but it has never attempted to bite me.
Not enough experience with milks but if you mean the eastern milk snake I would then have to say I think it would be the most difficult of the three.
