My pacman accidentally ate a piece of green pepper that we were using to feed the crickets... Is he going to be ok? Is this poisonous to him?

While it probably won't be well digested, unless it is large enough to cause an impaction it shouldn't be an issue..
If you are really concerned then you can check with an amphibian vet.

Just a curious question arose while reading your post. If you are worried about green peppers being poisonous why would you gut load your crickets with it? because the frog will eat the green pepper while it is inside the cricket, even thought it wont be as concentrated he will still be feeding on it. Just curious
