Yes, you need to gut load your mealies. If they didn't move it's because they were not warm yet. Take them out of the fridge in the morning and put them in the gut load and leave them sitting some where warm(room temp works fine)then feed those mealies that night.
No, you do not need a humid hide, but they are nice to use when your gecko is shedding. I only put them in the cages when my guys/girls are getting ready to shed. 5 out of 9 will not set foot in the humid hides, but I offer them anyway. None of them have ever had any serious shedding problems. At most a toe will get stuck every once in a while and that can be removed with a moist Q-tip. Just be sure to check out your gecko after every shed to be sure nothing is stuck anywhere(especially toes, they can be lost due to stuck shed)
