thermostat vs. rheostat

How do they each work?

Thermostat: after a certain temp is reached, turns off, and then turns back on when the temp drops below?

Rheostat: steadily controls the flow of electricity to keep the temp right (like an automatic dimmer?)

Have a few balls in a rack right now, using a dimmer switch temporarily, which of the previous is better and am i right on how they each work?
