The colors on those guys are incredible. Do they keep them into adult hood?

Yes, this species does retain most of its younger colors.
But there are other species of Oxyrhopus like the petola that have colors that fade or shaded as they grow, however I have several friends with adult rhombifer and I had an adult and it looked just like these babies.
